Abstract

According to the Kyoto Protocol (2019) established by the World Tourism Organization (UNWTO) and the UNESCO around the subjects of tourism and culture, this document pushes to raise the value of Traditional Knowledge holders from local communities to put forth creative solutions around cultural tourism. A clear example that deserves this type of promotion is the infallible trio: Ñai'ûpo, Tembipuru and Poytáva, these are the ancestral ceramic technique, the native utilitarian ceramic pieces and the traditional dishes part of our Paraguayan nutrition.

Author Biographies

Celeste Escobar, Universidad Columbia del Paraguay

Professor at the UCP since 2013 and researcher recognized in national and international
publications for her valuable contribution to the Heritage of Cultural Heritage of
Paraguay and the world. His dedication as an empirical ceramist and community manager
of ‘Kambuchi Apo’ in the last decade, has led to the revaluation of Ñai’ūpo art and the
reuse of ñai’ū tejipuru locally and abroad. In 2020 she was distinguished as "Promoter
of indigenous languages ​​and cultures of Paraguay" by the National Government.  

Víctor Manuel Giménez Gómez, Universidad Columbia del Paraguay

Originally from Villeta, he has a degree in Tourism and Hospitality, graduated from the
Columbia University of Paraguay, a subsidiary of San Lorenzo, has a Specialization in
Pedagogy and has been trained in the various culinary arts. He has worked in hospitality
and human services management. Entrepreneur of ‘HE’ where he dedicates himself to
his passion: the world of gastronomy and artisan culinary art.
